1 medium West Indian pumpkin
cinnamon (to taste)
vanilla (to taste)
salt and sugar (to taste)
1¼ cup of flour ( you can use Presto)
Oil for frying
Cut the pumpkin in cubes and boil until cooked and mash.
Add the rest of the ingredients.
Drop into hot oil by tablespoons.
Cook on both sides until done and golden.
Note: Oil should be hot but not at high temperature, Not to burn the tortitas when put to frying.
