½ cup water
1/8 cup rice
2 teaspoons salt
4 cups water
1 tsp lemon juice
1 medium onion
5/8 pounds of potatoes - chopped
5/8 pounds pumpkin - chopped
1 ¼ pounds of chicken
Soak rice in ½ cup water. Boil in a pot 4 cups of water, lemon juice, salt and onion.
Add the washed chicken, potatoes and pumpkin. When boiling, cover the pot well, reduce heat and simmer to warm for 45 minutes.
Mash the pumpkin. Drain the rice well, add it and mix with the soup. Cover the pot and boil well for another 20 minutes.
Personal Suggestion: This is a very easy and tasty recipe for a lunch weekend. Accompany this soup with salad and fried ripe banana.
